Deconstructed Egg Roll in a Bowl

Egg rolls are too good to stay an appetiser. This is the filling, made filling.

One pan, twenty minutes, and everything in it is the part of an egg roll you actually wanted. The gochujang and sriracha give it enough heat to feel like a treat rather than a diet dinner.

It reheats well, which makes it as much a lunch for tomorrow as a dinner for tonight.

Ingredients

  • 1 tbsp avocado oil

  • 4 scallions, chopped

  • 1 lb ground chicken

  • 4–5 cloves garlic, chopped

  • 1 tbsp gochujang

  • 2 tbsp liquid aminos

  • 1 tbsp rice vinegar

  • 1 tbsp sriracha

  • ½ tbsp freshly grated ginger

  • 3 cups shredded cabbage

  • 2 cups shredded carrots

Spicy mayo

  • 2 tbsp mayo

  • 1 tsp sriracha

Method

  1. Heat the avocado oil in a large skillet or wok over medium heat. Add the white parts of the scallions and sauté 1–2 minutes, until fragrant.

  2. Add the ground chicken and cook 5–7 minutes, breaking it apart as it browns.

  3. Stir in the garlic, gochujang, liquid aminos, rice vinegar, sriracha and ginger. Cook 2–3 minutes to let the flavours develop.

  4. Toss in the cabbage and carrots. Cook 4–5 minutes, until tender with a bit of crunch left.

  5. Whisk the mayo and sriracha together for the spicy mayo.

  6. Divide into bowls, drizzle with spicy mayo and top with the scallion greens.

Notes

  • Optional: Sesame seeds or chilli flakes for an extra kick. Serve over cauliflower rice, or just as it is.

Frequently asked questions

Can I use ground beef or turkey instead of chicken?

Both work with no other changes. Turkey behaves almost identically; beef gives a richer result, so drain the fat before adding the sauces.

Is egg roll in a bowl good for meal prep?

Yes. It keeps four days refrigerated and reheats in a pan or microwave. Store the spicy mayo separately and add it when serving.
